Stoke by Nayland Hotel, Golf and Spa is proud to welcome its new award-winning Executive Head Chef Alan Paton who comes to us after a career so far working in five star hotels, three AA rosette and bib gourmand restaurants with this he has also worked at the Hotel L’Horizon in Jersey, A five star game lodge in South Africa and on The Seabourn Pride cruise ship which is part of Cunard.
At our Stoke by Nayland Hotel, Golf & Spa, Alan overseas a brigade of up to 20 chefs in peak period, each of whom is dedicated to providing delicious and innovative dishes, with the freshest of ingredients sourced from quality local producers.
Alan comes from a family of chefs, hoteliers, restaurateurs and publicans so it was somewhat inevitable what career path he would follow.
Trained at 17 with Compass Services, Alan has worked in a large number of five-star establishments including the prestigious Turnberry the five-red-star Golf Hotel, the Merrion Hotel in Dublin which won three rosette status within a month of opening and the Selsdon Park Hotel in Croydon, at that time the largest privately owned golf hotel in the UK.
Alan was previously Head Chef at the highly regarded restaurant with rooms-Sutherland House in Southwold, Suffolk where he was awarded 2 AA rosettes for cuisine, 2/10 from the Good Food Guide, Best Restaurant in the U.K. for the best use of local produce, A best dish of the year award from Restaurant Magazine. Alan has also won numerous gold awards for pork based products for the restaurant industry and in 2009 he won the Skills For Chefs award for the profit sector which includes hotels, restaurants and pubs. He is returning to Skills for Chefs in Sheffield again this year to give a masterclass demonstration in Black Pudding, alongside which there will be prominent Michelin starred chefs and industry leaders.
Alan is now looking to make the Stoke by Nayland Hotel, Golf & Spa’s exquisite Lakeside restaurant a food destination – a destination of choice where people will choose to come to dine, even if they are not residents.
Our chef as part of our service endeavours to meet the needs of our guests and is always more than happy to discuss menus and alternative options, especially if they are staying for more than two nights and “they fancy something a little different”.
Alan’s ambition is to make the Lakeside restaurant’s cuisine undoubtedly the focus of every guest’s visit, using the freshest of ingredients. He is passionate about sourcing British ingredients of the finest quality and has established relationships with small local Suffolk specialist producers and breeders, and chooses the finest meat to his exact specifications.
Says Alan: “At some time I am aiming to bring in a new range of hotel-made sauces and possibly chutneys and pickles using local suppliers which can be sold through our speciality shop Pippin – straight from the kitchen.
“Watch out for cookery demonstrations and master classes – even possible residential cookery courses – as the months go on.”
Alan has put his services forward as an auction prize for an upcoming charity night for prostrate cancer, where, to the highest bidder Will develop a menu for four which will be served in the winners home in the style of Lakes Restaurant.
Stoke by Nayland Hotel, Golf & Spa’s Lakeside restaurant is open for lunch and dinner. Reservations are preferable and the restaurant is open to residents and non-residents daily.
