I am 48, have been married for 22 years to Liz, who I met whilst working at the Westbury Hotel in London-she was a receptionist! (This seems to be a very popular way of meeting your partner if you work in the catering trade!). I have a daughter, aged 17 that is studying in 6th Form-Nothing to do with catering! Just headaches with driving lessons etc-I am sure you all know what I mean.
I have spent the majority of my career at Hintlesham Hall Hotel, in the capacity of Head Chef. Although I did work the first 2 years of a 4 year apprenticeship in Canterbury, Kent followed by 8 years in London, with a year off in Australia for good behaviour. I did work out there too though, I am really please that I did, as it was a great experience.
I was fortunate enough to start at Hintlesham just as it was expanding from 17 to 33 bedrooms. My first main project was to design a new kitchen to accommodate the extra catering needed for such an expansion plan. It is exactly the same today as it was when I first opened it, minus a couple of waste disposal units which ate too much of the cutlery! Throughout my time here (not a prison sentence!) I have been fortunate to have chefs and kitchen assistants that have stayed for many years, most of my Sous Chefs have stayed in excess of 5 years, Jon, my present one being a good example in as much as he has been here since 2005.
Outside of work I really enjoy playing golf-I am always up for a challenge if anyone fancies it. Although I don’t play anywhere near as much as I used to when my wife was working full time in London, as I have a golf course outside the back door of work, so was always out playing a few holes in the afternoons. I suppose the boring thing to say is that I enjoy eating out, which I do. Just remember though when you are writing a C.V. don’t write that your hobbies include cooking-fairly obvious and waste of space on a C.V. I wish I could say that I enjoy D.I.Y at home, but I don’t, although I do give it a bash, digging out and laying a patio and path around the side of my house is my pride and joy in that department.
